BREAKFAST SAUSAGE BALLS

These sausage balls are at hit in our home!  My 9-year-old son can’t stop making yummy noises when I serve these.  Yet they are simple and quick! Additionally, I often triple the recipe and freeze 2/3 of the sausage balls, which means I cook one time and produce 3 meals.

INGREDIENTS:

1-1/2 pounds ground pork or turkey or a combination of pork and beef

2 Tablespoons fresh sage, minced (I use a food processor)

1-1/2 Tablespoons fresh rosemary, minced (I use a food processor)

2 teaspoons honey or maple syrup

1-1/2 teaspoons Real Salt

1 teaspoon freshly ground black pepper (optional)

INSTRUCTIONS:

  1. Preheat oven to 350 degrees F.

  2. In a large glass bowl, combine all ingredients.  Using your hands, mix ingredients thoroughly.

  3. Using a cookie scoop or spoon, transfer walnut-sized sausage balls onto a glass baking pan or baking sheet.  Bake for 20-25 minutes, turning half way through.  Make sure sausage balls are golden brown on the outside and cooked through on the inside.

  4. Alternatively, cook over medium-low heat on the stove using a large skillet.  Heat the skillet then add 1 Tablespoon avocado oil.  Next, gently add the sausage balls.  Cook for approximately 8 minutes then flip.  When golden brown on the outside and not pink on the inside, sausage balls are ready.

These sausage balls freeze well.  Store up to 3 months in the freezer in an air-tight container.

*Use organic ingredients whenever possible.
